For Easter, I was responsible for bringing dessert. I wanted to make something that felt like an Easter dessert without it being overly sweet. The result was phyllo pastry layered with orange scented ricotta, honey, rum soaked raisins, almonds, and soaked in a honey vanilla

Other than sugar, cheesecake has lots of keto friendly ingredients. The eggs, butter, and cheese are all staples of a low carb diet. Mix in a little sweetener, and you have an everyday dessert. This cheesecake is sweet with hints of vanilla, orange, and almond.
