LOW CARB BREAD
If you are doing low carb and want bread, this is as good as it gets. I’ve tried many recipes and most of them were a big fail, and others not great. This one is actually good. It’s tasty, satisfying, and can be cut into slices.
Makes 1 loaf
1 cup almond flour
3/4 cup coconut flour
1/3 cup sesame seeds
1/2 cup ground chia/flax mix
1/4 cup ground psyllium husk powder
1 tablespoon baking powder
1/4 cup sunflower seeds
1 teaspoon salt
1 (8oz) brick of cream cheese
1/3 cup melted butter
3/4 cup cream
Preheat the oven to 350°F.
In a large bowl, mix all dry ingredients.
In another bowl, with an electric mixer, mix the eggs, cream cheese, butter, and cream until smooth. Add to the dry ingredients. Mix well with a wooden spoon.
Grease a bread pan and put parchment paper at the bottom to prevent sticking. Pour mixture into the bread pan.
Bake for 60 minutes. Prick the bread with a knife, it should come out clean. If not, bake for an additional 5 minutes. Remove the bread from the pan and let cool. Do not keep in the pan to cool or it will get soggy.
Once cooled, slice into 1 cm slices and store in the freezer.
It is a really heavy bread, so 1 slice is enough. It also toasts well, I like to make open-faced sandwiches with them. You can also cut a few slices into cubes to make croutons.
I find toasting it is the best. It gives the bread more crunch and makes it warm. Add a bit of butter to make it even more delicious.
