PROSCIUTTO RADICCHIO TOAST

This recipe was inspired by a bad restaurant experience. I still wanted to try the toasts so I decided to make it myself. These are perfect for a weekend brunch. They’re so easy to make and are delicious.

PROSCIUTTO RADICCHIO TOAST

Ingredients
  

  • 2 slices organic rye bread
  • 1 tbsp olive oil plus more for drizzle on the bread
  • 1 clove garlic
  • 1 cup radicchio shredded
  • ¼ small red onion sliced
  • ½ tbsp balsamic vinegar
  • 1 tbsp grated parmesan plus more for finishing
  • salt & pepper to taste
  • 2 slices proscuitto
  • ½ cup fresh burrata cheese
  • 1 tbsp parsley chopped

Instructions
 

  • Preheat oven at 350ºF.
  • Put prosciutto and bread on a cookie sheet and drizzle the bread with olive oil. Bake for 10 minutes until the bread is toasted and the prosciutto crisp. Rub the toast with the clove of garlic while hot.
  • In a bowl, combine radicchio, onion, olive oil, balsamic, parmesan, and a pinch of salt. Mix well with 2 forks.
  • Spoon burrata on the toasts. Sprinkle with salt & pepper.
  • Top with the salad.
  • Finish with the prosciutto.
  • Sprinkle with chopped parsley.

Notes

I call these my breakfast toasts. This is one of my favourites but you can make so many variations. All you need is a soft cheese, salad, meat, bread, and olive oil.
