CHAI SPICED GRANOLA BARS
To me, granola bars are the perfect snack. They carry well, are sweet and tasty, and you can make a batch of them and they last for two weeks in the fridge. I always have one in my bag, and I keep a container of them at work. When I don’t have time for breakfast, I have two of these and a coffee and I’m good to go.
CHAI SPICED GRANOLA BARS

Ingredients
- 3 cups organic rolled oats
- 1 cup dates chopped
- ¼ cup flax seeds
- ¼ cup coconut oil melted
- ¼ cup honey
- ⅔ cup pumpkin seeds
- 2 eggs
- 1 tbsp chai spice
- ¼ tsp salt
Instructions
- Preheat oven at 350ºF.
- Melt coconut oil in the microwave for 30 seconds so it becomes a liquid. Add honey,
- In a large bowl, add oats, pumpkin seeds, flax seeds, chai spice and salt. Mix well.
- Remove pits and chop dates into small pieces and mix with the dry ingredients. Mix them with your hands so they separate and get coated with the dry mix. This will prevent them from sticking together.
- Add coconut oil and honey. Mix well.
- Beat 2 eggs and add to the mix. Mix well.
- Using a 1/4 cup measure scoop mix and pat down flat with a spoon. Place on a lined baking sheet.
- Bake for 20 minutes.
- Let cool and put in an airtight container.
Notes
You can also put these in a baking dish and let cool and cut into bars, but I like the pre-made bars.
