ALMOND CHERRY COOKIE BARS
This recipe came about because I had almond butter and cherry jam and wanted to make a dessert. These are sweet and chewy and the almond butter gives it a nice almond flavour. Definitely great for a weeknight treat.
ALMOND CHERRY COOKIE BARS

Ingredients
- 1 cup almond butter
- ½ cup sugar
- 1 egg
- 1 tsp vanilla extract
- ½ tsp almond extract
- 1 tsp baking powder
- ½ cup flour
- 1 cup cherry jam
Instructions
- Preheat oven to 325°F.
- In a large bowl, beat the almond butter with an electric mixer. Add egg and mix.
- Add the sugar, baking powder, vanilla, almond extract and mix well.
- Add the flour and mix with a spatula until fully incorporated. Then use your hands to mix and crumble the dough.
- In a square baking dish, put ⅔ of the mixture into the dish and press down evenly.
- With an offset spatula, spread the cherry jam evenly on top of the cookie base.
- Then sprinkle the rest of the cookie dough on top evenly.
- Bake for 30 minutes.
- Let cool for 20 minutes before cutting into bars.
