SPICED OATMEAL COOKIES

My favourite cookies are oatmeal cookies. I always make them with dates or raisins. This time I tried a few different things. I swapped out the butter for oat margarine which worked really well, it enhanced the oat flavour. I then added warming spices like cinnamon and nutmeg instead of nuts and dried fruit. I also added sprouted flax which is super nutritious and really went well with the oats. It made this a healthier cookie.

SPICED OATMEAL COOKIES

Ingredients
  

  • ½ cup becel oat margarine
  • ½ cup sugar
  • ½ cup light brown sugar packed
  • 1 egg
  • ½ tsp vanilla extract
  • ½ cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp vanilla beans
  • ¼ tsp salt
  • 2 cups quick oats
  • ½ cup sprouted flax seeds

Instructions
 

  • Preheat oven to 375ºF.
  • In large bowl, cream together butter, sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy.
  • Add flour, baking soda, cinnamon, nutmeg, vanilla beans, and salt. Mix till you have a batter, then stir in the oats.
  • Drop 1 tablespoon of dough onto a cookie sheet lined with parchment paper. I use a small cookie batter scoop.
  • Bake for 10 minutes until golden brown.
  • Transfer from baking sheet to wire rack and let cool.

Notes

Store in an airtight container. 
You can substitute the oat margarine for butter or regular margarine.
