Preheat oven to 375ºF.
In large bowl, cream together butter, sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy.
Add flour, baking soda, cinnamon, nutmeg, vanilla beans, and salt. Mix till you have a batter, then stir in the oats.
Drop 1 tablespoon of dough onto a cookie sheet lined with parchment paper. I use a small cookie batter scoop.
Bake for 10 minutes until golden brown.
Transfer from baking sheet to wire rack and let cool.
