Method
- Preheat oven to 375ºF.
- In large bowl, cream together butter, sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy.
- Add flour, baking soda, cinnamon, nutmeg, vanilla beans, and salt. Mix till you have a batter, then stir in the oats.
- Drop 1 tablespoon of dough onto a cookie sheet lined with parchment paper. I use a small cookie batter scoop.
- Bake for 10 minutes until golden brown.
- Transfer from baking sheet to wire rack and let cool.
Notes
Store in an airtight container.
You can substitute the oat margarine for butter or regular margarine.
