MANGO BASIL MIMOSA

I will never be the girl sitting at a bar sipping bourbon while scoping out the scene. I’m the girl day drinking on the patio with the fruitiest cocktail on the menu. Now that I have had so many cocktails, I have taken my inspirations and created some fun drinks to have on my balcony on those warm summer days or nights…

One of my favourite things to do with drinks is mix fruits and herbs. I love all the different combinations you can do. The mango and basil in this drink go so well together, and the sharpness of the ginger makes you savour every sip.

MANGO BASIL MIMOSA

Course Drinks
Servings 4 drinks

Ingredients
  

  • 1 bottle Barefoot Bubbly Pinot Grigio

Basil Simple Syrup

  • ¼ cup sugar 
  • ¼ cup water 
  • 2 tbsp lemon juice 
  • ½ cup fresh basil leaves, packed
  • 1 packet ginger tea.

Mango Cubes

  • 2 cups frozen mango pieces
  • 1 packet ginger tea
  • ½ cup water

Instructions
 

Basil Simple Syrup

  • Put all ingredients into a sauce pan and simmer for 5 minutes.
  • Let cool.

Mango Cubes

  • Dissolve ginger tea in ½ cup hot water.
  • Put the frozen mango, water, and ginger tea into a blender. Blend into a puree. Pour into a square pan lined with parchment paper (it will be easy to remove from the pan).
  • Put in the freezer to set (at least 5 hours, better if overnight). Once frozen, remove from the freezer and take out of the pan. Dip a sharp knife into hot water and cut mango puree into big cubes. Put back into the freezer until ready to serve. 

To make the Drink

  • In a pitcher, pour the bottle of bubbly and add the simple syrup. Mix well.
  • In a wine glass, pour the bubbly 1/2 way. Add 3 to 4 mango puree cubes. Garnish with a basil leaf.

Notes

It may seem like there is a lot of mango for these drinks, that’s because there is. 1 bottle makes about 4 cocktails. The mango in this recipe is more than enough for 2 bottles, but I like putting more than I should in it, so as it melts I end up with a boozy smoothie.
I love Barefoot Bubbly wine, and will definitely be making more drinks with them. Below is a link to the bubbly I used, but as always, you can use your favourite wine to make it your own.

I always have this tea in my house. I use it when I’m sick. The ginger is really strong and is sweetened with honey. It’s little granules of ginger, cane sugar, and honey mixed together. It works really well with this drink. I won’t be using this tea just to soothe a sore throat anymore. I couldn’t find a website for reference, but it is sold at Walmart, I’ve put the link below. I buy it from my local Metro.
