LIMONCELLO THYME COCKTAIL
When I went to Capri I had a limoncello spritzer. This was such a nice refreshing drink. All it was was limoncello and sparkling water. I love to put an herbal note in my cocktails and make them a little stronger. So adding vodka and thyme really made this great.
LIMONCELLO THYME COCKTAIL
Ingredients
- 1/2 cup limoncello
- 1/2 cup Vodka
- 1 Lemon zested and juiced
- 1 litre Sparkling water
Thyme Simple Syrup
- 1/2 cup Sugar
- 1/2 cup Water
- 2 sprigs Thyme plus extra for garnish
- lemon zest
Instructions
- In a small pot on medium heat, add water, sugar, lemon zest, and thyme. Bring to a boil, then turn the heat down to a low and let simmer for 5 minutes. Take off heat and let cool completely. Once cooled, remove the thyme sprigs.
- In a pitcher, pour in the simple syrup, limoncello, lemon juice, and vodka. Stir well, then add the sparkling water.
- Serve over ice and garnish with a thyme sprig.
Notes
I like to make this mix the night before I am entertaining and pour the vodka, limoncello, lemon juice, and simple syrup into a bottle and keep it in the fridge. Then when I’m ready to make the drinks, I take the mix and the sparkling water out of the fridge and make as many cocktails as I need.
The mix can be stored in the fridge for up to a month, though you’ll probably finish it off before that.
