This drink take a little bit a prep work, but it’s easy to assemble and a crowd pleaser. Did I mention it’s also delicious? Sweet, sour, and boozy, with bubbles, what more could you want?

  • 1 bottle Sparkling wine Yellow Tail White Bubbles
  • 1 grapefruit segmented

Simple Syrup

  • 1/2 cup Sugar
  • 1/2 cup Water
  • 5 sprigs Thyme plus more for garnish

Grapefruit Cubes

  • 1 cup Grapefruit juice
  • 1 cup lemon juice


  • For the simple syrup, in a small saucepan, combine the thyme sprigs, sugar and water. Bring to a boil over medium heat. Reduce the heat and simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool completely.
  • Cut the ends off one of the grapefruits and place cut-side down on the counter. Using a paring knife, cut away the peel. Working over a small bowl to catch the juice, cut along the membrane on both sides of each segment and remove the segments. Place the grapefruit segments in a container until you're ready to use. Squeeze the juice from the membranes into the bowl. Discard the membranes.
  • Strain the simple syrup and grapefruit juice into a pitcher. Add the sparkling wine.
  • To make the drink, pour the mix into a flute or tall glasses. Drop in a few grapefruit cubes and segments and garnish with fresh thyme sprigs.


You could use a white or rose sparkling wine for this cocktail. My favourite is the Yellow Tail Bubbles because it has citrus notes that compliment the drink.
