STRAWBERRY ROSEMARY COCKTAIL
I love making summertime cocktails. This year I am obsessed with using sparkling wine and herbs. Strawberries are in season and can be used, but I tend to buy the frozen ones and use them as ice cubes in the drink.
STRAWBERRY ROSEMARY COCKTAIL
Equipment
- blender
Ingredients
- 1 bottle Yellow Tail Pink Bubbles
- ½ cup gin
- 16 frozen strawberries
- fresh rosemary sprigs for garnish
Strawberry Puree
- ½ cup frozen strawberries
- ¼ cup pink bubbles
- 1 tbsp lemon juice
Rosemary Simple Syrup
- ½ cup water
- ½ cup sugar
- 1 tbsp lemon juice
- 2 sprigs rosemary
Instructions
- In a small pot, add water, sugar, lemon juice and rosemary.
- Let simmer for 5 minutes. Remove from heat and let cool. Remove the sprigs of rosemary.
- Make the strawberry purée in a blender adding, ¼ cup of the bubbly, the frozen strawberries, and lemon juice.
- Blend until smooth.
- In a pitcher, pour the rest of the bottle of bubbly, gin, and rosemary simple syrup. Mix well.
- In a wine glass, add a few spoonful's of purée to make a layer on the bottom of the glass.
- Pour the bubbly filling ¾ of the glass. Add 4 frozen strawberries. Garnish with a sprig of rosemary.
Notes
This can be made in large quantities and in advance. Just make sure everything is chilled.
