I love making summertime cocktails. This year I am obsessed with using sparkling wine and herbs. Strawberries are in season and can be used, but I tend to buy the frozen ones and use them as ice cubes in the drink.

Makes 4 drinks

1 bottle of Yellow Tail Pink Bubbles
1/2 cup gin
16 frozen strawberries
fresh rosemary sprigs

Strawberry Puree
1/2 cup frozen strawberries
1/4 cup pink bubbles
1 tablespoon lemon juice

Rosemary Simple Syrup
1/2 cup water
1/2 sugar
1 tablespoon lemon juice
2 sprigs of rosemary

In a small pot, add water, sugar, lemon juice and rosemary. Let simmer for 5 minutes. Remove from heat and let cool. Remove the sprigs of rosemary.

Make the strawberry purée in a blender adding, 1/4 cup of the bubbly, the frozen strawberries, and lemon juice. Blend until smooth.

In a pitcher, pour the rest of the  bottle of bubbly, gin, and rosemary simple syrup. Mix well.

In a wine glass, add a few spoonfuls of purée to make a layer on the bottom of the glass. Pour the bubbly filling 3/4 of the glass. Add 4 frozen strawberries. Garnish with a sprig of rosemary.

This can be made in large quantities and in advance. Just make sure everything is chilled.
