SPROUTED QUINOA

I love sprouted quinoa and I always use it over regular quinoa. It has so many benefits. Sprouted quinoa is more digestible and has better absorption of nutrients. The enzyme inhibitors are eliminated and phytic acid is reduced, which if you are like me, you get a tummy ache when you eat regular quinoa. As well, it’s higher in vitamins and minerals compared to non-sprouted quinoa. I like to make a batch of it and portion it out and freeze so it’s ready to go for my next meal.

SPROUTED QUINOA

Yield: 6 servings

Materials

  • 340 grams dried sprouted quinoa
  • cups water
  • 2 scoops bone broth optional

Instructions

  • In a pot on high heat, add water and bone broth. Bring to a boil.
  • Once bone broth is dissolved, pour in quinoa in and stir.
  • Reduce heat to a simmer and cover.
  • Cook for 15 minutes.
  • Once done, take off the heat and fluff with a fork.

Notes

I like to buy the bags of sprouted quinoa from Organic Traditions. I make the whole bag, then once the quinoa is cooled, I put it in freezer bag in 1 cup portions. I press them flat and let all the air out and freeze them. I like to add some bone broth in the water for extra protein, but that is optional.
