LOW CARB BREAD

If you are doing low carb and want bread, this is as good as it gets. I’ve tried many recipes and most of them were a big fail, and others not great. This one is actually good. It’s tasty, satisfying,  and can be cut into slices.

Ingredients
  

  • 1 cup almond flour
  • ¾ cup coconut flour
  • cup sesame seeds
  • ½ cup ground chia/flax mix
  • ¼ cup ground psyllium husk powder
  • 1 tbsp baking powder
  • ¼ cup sunflower seeds
  • 1 tsp salt
  • 6 eggs
  • 8 ounces cream cheese room temperature
  • cup melted butter
  • ¾ cup cream

Instructions
 

  • Preheat the oven to 350°F.
  • In a large bowl, mix all dry ingredients.
  • In another bowl, with an electric mixer, mix the eggs, cream cheese, butter, and cream until smooth.
  • Add to the dry ingredients. Mix well with a wooden spoon.
  • Grease a bread pan and put parchment paper at the bottom to prevent sticking. Pour mixture into the bread pan.
  • Bake for 60 minutes.
  • Prick the bread with a knife, it should come out clean. If not, bake for an additional 5 minutes.
  • Remove the bread from the pan and let cool. Do not keep in the pan to cool or it will get soggy.
  • Once cooled, slice into 1 cm slices and store in the freezer.

Notes

It is a really heavy bread, so 1 slice is enough. It also toasts well,  I like to make open-faced sandwiches with them. You can also cut a few slices into cubes to make croutons. I find toasting it is the best. It gives the bread more crunch and makes it warm. Add a bit of butter to make it even more delicious.
