CUCUMBER & SALMON BITES

Anyone who knows me knows I hate cucumbers. You will rarely find a recipe of mine that includes it. I won’t even try to make something with cucumbers. So how did this come about? My friends and I had a ladies luncheon and one of the ladies brought a cucumber. So while we were waiting for our lunch to be made, they snacked on this. I obviously did not try it, but my friends loved it.

CUCUMBER & SALMON BITES

Ingredients
  

  • 4 english cucumber sliced
  • 4 ounces smoked salmon
  • ½ cup greek yogurt
  • ¼ cup cream cheese room temperature
  • ½ lemon juice and zest
  • ½ tsp salt
  • ¼ tsp pepper
  • fresh dill for garnish

Instructions
 

  • Slice cucumber about 1/2 a centimetre thick into rounds.
  • In a bowl, mix the greek yogurt and cream cheese. Add the zest and juice of the lemon. Add the salt and pepper. Mix well.
  • With a teaspoon, dollop the mixture onto the cucumber slices.
  • Tear the smoked salmon into small pieces and place on top of the yogurt mix. Sprinkle a pinch of salt and pepper from a height.
  • Garnish with fresh dill.

Notes

Serve immediately or keep refrigerated until ready to serve.
They can be stored in an airtight container for a day or two, but are best serve fresh.
