LOW CARB BREAD
If you are doing low carb and want bread, this is as good as it gets. I’ve tried many recipes and most of them were a big fail, and others not great. This one is actually good. It’s tasty, satisfying, and can be cut into slices.
LOW CARB BREAD
Ingredients
- 1 cup almond flour
- ¾ cup coconut flour
- ⅓ cup sesame seeds
- ½ cup ground chia/flax mix
- ¼ cup ground psyllium husk powder
- 1 tbsp baking powder
- ¼ cup sunflower seeds
- 1 tsp salt
- 6 eggs
- 8 ounces cream cheese room temperature
- ⅓ cup melted butter
- ¾ cup cream
Instructions
- Preheat the oven to 350°F.
- In a large bowl, mix all dry ingredients.
- In another bowl, with an electric mixer, mix the eggs, cream cheese, butter, and cream until smooth.
- Add to the dry ingredients. Mix well with a wooden spoon.
- Grease a bread pan and put parchment paper at the bottom to prevent sticking. Pour mixture into the bread pan.
- Bake for 60 minutes.
- Prick the bread with a knife, it should come out clean. If not, bake for an additional 5 minutes.
- Remove the bread from the pan and let cool. Do not keep in the pan to cool or it will get soggy.
- Once cooled, slice into 1 cm slices and store in the freezer.
Notes
It is a really heavy bread, so 1 slice is enough. It also toasts well, I like to make open-faced sandwiches with them. You can also cut a few slices into cubes to make croutons. I find toasting it is the best. It gives the bread more crunch and makes it warm. Add a bit of butter to make it even more delicious.
