SPICY MAPLE GLAZED CARROTS

My Spicy Glazed Maple Carrots are a tantalizing twist on the classic glazed carrot side dish that promises to awaken your taste buds. Carrots and shallots are transformed into a sweet and spicy dish with the sweet and smoky flavour of maple syrup and the heat from the Aleppo pepper. This side dish is a delectable accompaniment to any meal, leaving a lasting impression on your palate.

Ingredients
  

  • 11 carrots
  • 7 shallots
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 2 tbsp butter
  • 1 tsp Aleppo peppers
  • 2 tbsp maple syrup

Instructions
 

  • Preheat oven to 400℉.
  • Add the olive oil and butter to the baking dish and put in the oven as the oven is preheating so the butter can melt.
  • Meanwhile, peel the carrots and cut into 1 inch pieces on an angle.
  • Slice shallots into 1 inch pieces.
  • Add the carrots and shallots into a baking dish.
  • Once the butter has melted, remove baking dish from the oven and add the carrots and shallots.
  • Sprinkle the salt, pepper, and Aleppo pepper onto the carrots and shallots.
  • Mix well, coating the vegetables in the butter and olive oil and seasonings.
  • Put back in the oven and bake for 40 minutes.
  • Once done, remove from the oven and drizzle the maple syrup over the vegetables and mix well.
  • Serve warm.

Notes

If you don’t have Aleppo pepper, you can use crushed chili flakes. 
This can be made into a vegan dish by replacing the butter with more olive oil.
