MUHAMMARA

When I was visiting turkey this spread was always offered as an appetizer with bread. It was my favourite. I had no idea what it was or what was even it in. All I knew is that it tasted delicious. I’ve seen this made to a hummus consistency, but when I ate it in Turkey it was thicker – somewhere between a hummus and a paste. It was more of a thick spread and that’s how I make it, just like the ones I had in Turkey.

Equipment

  • food processor

Ingredients
  

  • 3 roasted red peppers
  • 2 red chillies chopped
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup walnuts
  • 1 clove garlic
  • 1 tbsp sherry vinegar
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp sumac
  • ¼ cup bread crumbs
  • ½ lemon zested and juiced

Instructions
 

  • Blend all ingredients in a food processor.
  • Transfer to a bowl and drizzle with olive oil.
  • Serve with toasted pitas.

Notes

This can be made in advance and will keep in the fridge for 3-4 days. 
Store in an airtight container.
