BLUEBERRY BUTTERMILK MUFFINS

Blueberry muffins are my favourite muffins. I love using fresh blueberries that burst with every bite. I used buttermilk and add orange zest for a sweet aromatic citrus. Make a batch of these and they will become a staple in your household.

BLUEBERRY BUTTERMILK MUFFINS

Equipment

  • 1 muffin tin

Ingredients
  

  • 2 cups all purpose flour
  • 1 cup sugar
  • ½ tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ cup butter melted
  • 2 eggs
  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 cups blueberries
  • 1 orange zested

Instructions
 

  • Preheat oven to 375℉.
  • In a large bowl, with a whisk, mix the butter and buttermilk. Add the orange zest and eggs and whisk.
  • Add the vanilla and salt and mix.
  • Add the baking soda and whisk.
  • Add the baking powder and whisk.
  • Add the sugar and whisk.
  • Change to a spatula and add the flour and in a folding motion mix together until fully incorporated.
  • Add the blueberries and fold in until the blueberries are evenly mixed in.
  • Line a muffin tin with muffin cups. Spoon in butter.
  • Bake for 30 mins.
  • Remove from the oven and let cool on a wire rack.

Notes

Usually when you make muffins you have a bowl with the wet ingredients and a bowl with dry ingredients and then you combine. 
To save on washing up, I add things one at a time and mix with each addition until I start with the flour as you don’t want to over mix. This works and is an easier way to make muffins. 
These muffins can be frozen once cooled. But they are so good they will go really fast.
