MEXICAN TORTILLA PIE

No words for how good this is. Easy to assemble and feeds a lot of people. It’s spicy because I’m a spicy girl. So if you’re not into spice, you can use less chilli powder and jalapeno.

MEXICAN TORTILLA PIE

Ingredients
  

  • 1 package tortillas 10 inch tortillas
  • 1 red pepper chopped
  • 1 green pepper chopped
  • 1 onion  chopped
  • 1 clove of garlic minced
  • ½ pound ground beef
  • 1 can black beans
  • 1 tsp cumin
  • ½ tsp chilli powder
  • salt & pepper to taste
  • 2 tsp dried oregano
  • 1 jalapeño pepper chopped
  • 3 cups grated cheese tex mex
  • ½ cup fresh parsley chopped
  • salsa and sour cream for topping

Method
 

  1. Preheat oven to 350°F.
  2. In a frying pan, brown the ground beef.  Add the onion, and garlic. Cook until softened.
  3. Add cumin, chili powder, and jalapeno. Mix well.
  4. Wash and drain black beans and add to the beef. Warm through.
  5. Add parsley. Mix well.
  6. Chop green and red peppers.
  7. In a spring form pan layer the tortillas. About 3 each layer. Add a layer of the meat and beans. A layer of the peppers. A layer of cheese.
  8. Repeat steps until the pan is full. Your last layer will be the tortillas. Press down a bit to get rid of any spaces between the layers.
  9. Sprinkle with the remainder of the cheese
  10. Bake for 40 minutes.
  11. Let cool. Remove spring form pan.
  12. Serve with sour cream and salsa.
