SPICY QUINOA FETA SALAD
One of my favourite lunches is my spicy quinoa feta salad. It is quick and easy to make which is perfect for a weekday lunch. This is a vibrant and flavorful dish perfect for any meal. Sprouted quinoa forms a hearty base, rich in protein and fiber. Tossed with spicy muffuletta and dressed in its oil, and parsley for some freshness. Crumbled feta cheese adds a creamy, tangy contrast. This salad is a delicious, refreshing, spicy, and nutritious option for a weekday meal.
SPICY QUINOA FETA SALAD
Ingredients
- 1 cup sprouted quinoa cooked
- 1 ounce feta crumbled
- 2 tbsp muffuletta
- ΒΌ cup fresh parsley chopped
Instructions
- This is very easy to assemble. Add the quinoa and muffuletta to a bowl and mix together. The muffuletta comes in oil so when adding it, scoop it with the oil.
- Add the feta and parsley and serve.

This is one of my go-to lunches so I have everything premade or ready to use in my fridge.Β
I always use sprouted quinoa but regular quinoa works just as well. I like to make a big batch and portion it into 1 cup and freeze so it’s ready to use.

I always have feta in the fridge, I buy the bricks and just take what I need. The pre-cubed feta would work here too. Just use as much as you want.Β
Muffuletta is mixed vegetables in oil and vinegar. It is a great condiment that can be used in so many ways.Β
