This is very easy to assemble. Add the quinoa and muffuletta to a bowl and mix together. The muffuletta comes in oil so when adding it, scoop it with the oil.
Add the feta and parsley and serve.

This is one of my go-to lunches so I have everything premade or ready to use in my fridge. I always use sprouted quinoa but regular quinoa works just as well.
