- This is very easy to assemble. Add the quinoa and muffuletta to a bowl and mix together. The muffuletta comes in oil so when adding it, scoop it with the oil.
- Add the feta and parsley and serve.
Notes
This is one of my go-to lunches so I have everything premade or ready to use in my fridge.
I always use sprouted quinoa but regular quinoa works just as well. I like to make a big batch and portion it into 1 cup and freeze so it's ready to use.

I always have feta in the fridge, I buy the bricks and just take what I need. The pre-cubed feta would work here too. Just use as much as you want.
Muffuletta is mixed vegetables in oil and vinegar. It is a great condiment that can be used in so many ways.
