HIGH PROTEIN MISO SOUP

I really like miso soup, especially when it’s cold out. My high protein miso soup is a nutritious and comforting dish. Start by simmering bone broth, then add miso paste, and add cubed tofu for a protein boost. The mushrooms give it an earthy flavor and the green onions for some freshness. This hearty miso soup is not only delicious but also rich in protein, making it a perfect wholesome meal.

Ingredients
  

  • 2 tbsp bone broth powder
  • ½ brick firm tofu cubed
  • 2 green onions chopped
  • 3 shiitake mushrooms sliced
  • 2 tbsp miso paste
  • 2 sheets seaweed snacks cut into strips

Instructions
 

  • In a pot, bring water to a boil. Add in the bone broth powder and let dissolve. Mix to break up the chucky bits.
  • Once your bine broth is dissolved, turn heat down to a simmer and add the tofu, mushrooms, and green onions. Let simmer for 5 minutes.
  • Turn off heat and add the miso paste. Stir to dissolve into broth.
  • Add seaweed strips and serve.

Notes

Miso shouldn’t be cooked. The benefits of the fermentation will be destroyed in cooking. That’s why you put it in at the end and let it dissolve in the heat.
