GNOCCHI with Basil

WEEKNIGHT GNOCCHI

Ingredients
  

  • 1 tbsp olive oil basil infused recommended
  • 300 grams gnocchi Olivieri recommended
  • 1 ½ cups basil tomato sauce Neal Brothers recommended
  • ½ cup parmesan cheese grated
  • 2 springs fresh basil

Method
 

  1. In a large frying pan on medium heat, add the olive oil.
  2. Once the oil is heated add the gnocchi and fry. They will plump up and get golden and crispy.
  3. When the gnocchi is done, turn the heat to a simmer and add the tomato sauce. Mix well coating all the gnocchi and let simmer for 10 minutes.
  4. Take of the heat and stir in the parmesan and ripped up basil leaves.
  5. Top with extra parmesan if desired.

Notes

I make my own herb infused oils and I have a basil one that I use in this dish, but olive oil works just as well. 
If you don't have fresh basil, you can leave it out or add 1 tsp of dried basil. 
Any store bought gnocchi and tomato sauce will do, but these are my favourites.
