Place a baking rack on a sheet pan and place the bacon on the baking rack.
Bake for 15 minutes.
Remove from the oven and brush with the date syrup. Turn over and brush the other side. Place back in the oven for 5-10 minutes. Check after 5 minutes, if it needs more time, let bake for an additional 5 mins.
Remove from oven and transfer to a plate lined with paper towel to absorb the oil.
Plate and serve.
Notes
When it's in the last 5 minutes, keep an eye on it. Depending on your oven it could be in 5 minutes or need a few more minutes. It can go from perfect to burnt very quickly in those last few minutes. Put the bacon on the paper towel to absorb some of the oil, but don't keep it on the paper towel as it will stick to it as it cools.
