GINGER ICE CREAM SANDWICHES
Yield: 15 sandwiches
Materials
- 1 box ginger snap cookies
- 1 container ginger ice cream
Instructions
- Let ice cream soften for 15 minutes.
- Line a baking sheet with parchment paper.
- Using an ice cream scoop. Take a big scoop of ice cream and place it on the cookie. Top the ice cream with the second cookie and press gently together.
- Place the cookie sandwiches on the baking sheet and freeze for 30 mins.
- Serve or transfer to a freezer proof container with a lid and freeze for later.
Notes
If you are using my ginger ice cream recipe, double it. That will be enough for a box of cookies.

The ice cream must be soft or it will break the cookies when you press them together.
They must set in the freezer for 30 minutes to have the ice cream to harden again.
