DATE & OATMEAL COOKIES

Ingredients
  

  • ¾ cup butter softened
  • ¾ cup sugar
  • ¾ cup light brown sugar packed
  • 2 eggs
  • 1 tsp vanilla extract
  • cups all-purpose flour
  • 1 tsp baking soda
  • ¾ tsp ground cinnamon
  • ½ tsp salt
  • 1 cup rolled oats
  • cups quick oats
  • 1 cup dates chopped

Method
 

  1. Preheat oven to 375ºF.
  2. In large bowl, cream together butter, sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy.
  3. Add flour, baking soda, cinnamon, and salt. Mix till you have a batter, then stir in the oats and dates.
  4. Drop 1 tablespoon of dough onto a cookie sheet lined with parchment paper.
  5. Bake for 8 to 10 minutes until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

Notes

Don't want to make a big batch? Roll dough into a log with parchment paper. Then wrap in plastic wrap and then tin foil and freeze. To bake, cut slices of the dough and place on a baking sheet and bake for 10 mins at 375ºF.
