STRAWBERRY ROSEMARY COCKTAIL

Ingredients
  

  • 1 bottle Yellow Tail Pink Bubbles
  • ½ cup gin
  • 16 frozen strawberries
  • fresh rosemary sprigs for garnish

Strawberry Puree

  • ½ cup frozen strawberries
  • ¼ cup pink bubbles
  • 1 tbsp lemon juice

Rosemary Simple Syrup

  • ½ cup water
  • ½ cup sugar
  • 1 tbsp lemon juice
  • 2 sprigs rosemary

Instructions
 

  • In a small pot, add water, sugar, lemon juice and rosemary.
  • Let simmer for 5 minutes. Remove from heat and let cool. Remove the sprigs of rosemary.
  • Make the strawberry purée in a blender adding, ¼ cup of the bubbly, the frozen strawberries, and lemon juice.
  • Blend until smooth.
  • In a pitcher, pour the rest of the  bottle of bubbly, gin, and rosemary simple syrup. Mix well.
  • In a wine glass, add a few spoonful's of purée to make a layer on the bottom of the glass.
  • Pour the bubbly filling ¾ of the glass. Add 4 frozen strawberries. Garnish with a sprig of rosemary.

Notes

This can be made in large quantities and in advance. Just make sure everything is chilled.
