STRAWBERRY ROSEMARY COCKTAIL
Yellow Tail Pink Bubbles
fresh rosemary sprigs
Rosemary Simple Syrup
In a small pot, add water, sugar, lemon juice and rosemary.
Let simmer for 5 minutes. Remove from heat and let cool. Remove the sprigs of rosemary.
Make the strawberry purée in a blender adding, ¼ cup of the bubbly, the frozen strawberries, and lemon juice.
Blend until smooth.
In a pitcher, pour the rest of the bottle of bubbly, gin, and rosemary simple syrup. Mix well.
In a wine glass, add a few spoonful's of purée to make a layer on the bottom of the glass.
Pour the bubbly filling ¾ of the glass. Add 4 frozen strawberries. Garnish with a sprig of rosemary.
This can be made in large quantities and in advance. Just make sure everything is chilled.
