PROSCIUTTO RADICCHIO TOAST

 

This recipe was inspired by my bad restaurant experience. I still wanted to try the toasts so I decided to make it myself. These are perfect for a weekend brunch. They’re so easy to make and are delicious.

2 slices organic rye bread
1 tbsp. olive oil, plus more for drizzle on the bread
1 clove of garlic
1 cup. shredded radicchio
1/4 of a small red onion
1/2 tbsp. balsamic vinegar
1 tbsp. grated parmesan, plus more for finishing
salt & pepper
2 slices of proscuitto
1/2c. fresh burrata cheese
parsley

Preheat oven at 350º

Put prosciutto and bread on a cookie sheet and drizzle the bread with olive oil. Bake for 10 minutes until the bread is toasted and the prosciutto crisp. Rub the toast with the clove of garlic while hot.

In a bowl, combine radicchio, onion, olive oil, balsamic, parmesan, and a pinch of salt. Mix well with 2 forks.

Spoon burrata on the toasts. Sprinkle with salt & pepper.

Top with the proscuitto.

Sprinkle with chopped parsley.

I call these my breakfast toasts. This is one of my favourites but you can make so many variations. All you need is a soft cheese, salad, meat, bread, and olive oil.
