Anyone who knows me knows I hate cucumbers. You will rarely find a recipe of mine that includes it. I won’t even try to make something with cucumbers. So how did this come about? My friends and I had a ladies luncheon and one of the ladies brought a cucumber. So while we were waiting for our lunch to be made, they snacked on this. I obviously did not try it, but my friends loved it.

1 english cucumber, sliced
4oz of smoked salmon
1/2 cup greek yogurt
1/4 cup cream cheese, room temperature
juice and zest of half a lemon
1/2 teaspoon salt
1/4 teaspoon pepper
fresh dill for garnish

Slice cucumber about 1/2 a centimetre thick into rounds.

In a bowl, mix the greek yogurt and cream cheese. Add the zest and juice. Add the salt and pepper. Mix well. With a teaspoon, dollop the mixture onto the cucumber slices.

Tear the smoked salmon into small pieces and place on top of the yogurt mix. Sprinkle a pinch of salt and pepper from a foot high.

Garnish with fresh dill.

Serve immediately, or keep refrigerated until ready to serve. They can be stored in an airtight container for a day or two, but are best serve fresh.
